I think it's important to be explicit on exactly what we're talking about here. Saying a wooden rollercoaster is getting 're-tracked' implies that the entire course is being replaced. This is a rare event and certainly not one that would happen so soon after opening unless the ride had some devastating construction flaw. Spotting pallets of timber stacked up next to the ride - entirely normal. The park employs a carpenter (or at least, they advertised a full time role specifically to maintain the coaster prior to opening), and the ride is constantly having pieces replaced. The entire ride is walked regularly (if not daily) and loose, damaged, rotting or worn timbers are replaced as they are found. I can't speak for Leviathan but I know on older woodies it's not unusual during the morning track walk to hear hammering as the chippy puts more nails into a board to re-secure it prior to the start of operations.
